My family and I love bananas. But they can go bad pretty quickly, especially in the summertime, when temperatures rise. To avoid wasting overripe bananas, we usually make banana bread. It is very easy to make and so delicious!
Here is the recipe we have been using for several years now. I hope you enjoy it!
Best Banana Bread
1/2 cup unsalted butter
1 cup sugar
2 eggs, beaten
3 bananas, finely crushed (for serious and extreme moist, try 4 bananas)
1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon vanilla (optional)
- Preheat oven at 350 degrees.
- Cream together butter and sugar.
- Add eggs and crushed bananas.
- Combine well.
- Sift together flour, baking soda and salt. Add to the cream mixture. Add vanilla.
- Mix just until combined. Do not overmix.
- Pour into greased and floured loaf pan.
- Bake at 350 degrees for 55 minutes.
Note: we often use salted butter and omit the 1/2 teaspoon salt, depending on what we have available in the house.
